Back again for our sixth harvest with the Suke Quto farm, Tesfaye's Honey processed Suke Quto lot is a reminder to us of the uniqueness of his farm. Honey processed coffees were unheard of until Tesfaye's experimental lots 2 harvest prior, but have slowly become a mainstay in Tesfaye's offerings.
Comprised primarily of two varietals endemic to Ethiopia, coffee cherries are stringently harvested and sorted for ripeness, partially depulped on disc pulpers, and then immediately sent to raise beds for drying. Rarely found in Ethiopia, the Honey process adds a unique twist on this classically clean and effervescent coffee.
Our fondness for this farm is not just based on Tesfaye's pursuit for improvement at his farm, but this pursuit is equally matched by his altruistic motives for growing coffee, partnering with coffee importer Trabocca to help build a school for his community.
