A recent entry into the world of Specialty Coffee, Myanmar has been on the right path to achieving high quality coffee for a few years now. Produced in Ywangan Township, the A Lel Chaung Village is one of handful of producers who have made strides in production and harvesting methods. Spearheaded by community leader U Maung Than, approximately 250 families are responsible for an annual production of 3 tonnes of green coffee.
By ensuring that 100% of harvested cherries are fully ripe, the A Lel Chaung village have been able to start processing with greater quality potential. Under stewardship of Non-profit organization like Winrock International, villagers are educated on how to maintain the highest standards of processing and quality control.
This naturally processed coffee gets dried over 14-21 days on raised beds under optimal drying conditions (minimising temperature and humidity fluctuations). The extremely clean and complex profile of this coffee is a result of this meticulousness and attention to detail.
