From our favourite Coffee Garden, Coffea Diversa in Biolley, Costa Rica. Gonzalo Hernandez has created one of the largest private collections of coffee varietals. Choosing to pursue the path of genetic diversification and retaining the history and lustre of coffees that were once grown around the world but now have been all but forgotten. One of the many reasons why we have been partnering with Gonzalo for the third harvest. The first of our rare varietal release is a trio of Geishas.

Geisha 72 Hour Fermentation: Hand picked ripe cherries are dried with skin intact for 72 hours, before being de-pulped and dried on raised beds with mucilage intact
Petit Geisha Honey Process: A natural variation of the illustrious Geisha varietal, that results in smaller plant and slightly different bean shape. Handpicked ripe cherries are partially de-pulped with mucilage intact and left to dry on raised beds
